So I decided to take it behind the scenes and show you how it all goes down. It was a rainy day here in Long Beach and I wasn’t interested in going out. Gia called to order 2 dozen 2Mex Tamales and it was the perfect project for a rainy day
This was my second attempt at Ustreaming a live cooking show. The first attempt was a 6 hour Thanksgiving Extravaganza, complete with video & sound problems and lots of cursing (sorry Mom!)
Pumpkin & cinnamon masa with spicy blackbean, chipotle & corn filling… mmm mmm good!

1st I make the filling with black beans, chipotle, corn & onion
Next I mix up the masa and also add pumpkin, brown sugar & cinnamon. Then I separate and soak the corn husks. After that its time to start rolling tamales!

a plop of masa, a spoonful of filling and a cherry of masa on top

Roll it up like a one sided burrito

then flip it around and wrap it the same way in the other direction

add a corn husk tie to hold it all together (don't tie too tight!)

then steam for about 2 hours (add water if needed, check periodically)

AT LAST, the finished product! Sweet on the outside & spicy in the middle
