I had cooked a turkey the day before so I decided to make turkey stew with the left overs. It was Deeeelicious!

Occasionally I cook for Raekwon the Chef. A year or two ago I visited him at a video shoot to discuss his menu for the next day. He requested the same ol’ thing he’s always asked for when he’s in town: Teriyaki Salmon, Yellow Rice, Grilled Chicken and Green Beans. Don’t get me wrong, thats tasty and all but I was bored of making him the same thing every time. So I tell him that I can cook all sorts of things and asked if he wanted to try something different. So he thinks for a minute, head cocked to the side and hand on his beard and tells me, “yeah, my Grandmother used to make these patties… like beef patties but with turkey instead, make that too.” That was it, he had to leave.
He really got me on that one! What the hell was he talking about… a regular patty like a hamburger patty? Or maybe he meant like a Jamaican patty? I searched for recipes, called friends grandmas and went with the gut instinct that I was making a jamaican type patty. It was about 2am and I had 12 hours to develop an exact recipe for patties, cook the rest of the meal, look fly and deliver the whole shebang to his hotel in the valley (from Long Beach). Here’s how it all went down…
After the thyme is stripped, I saute onions, garlic & thyme in a lil olive oil. Then I add ground turkey and special seasonings.
Once they come out, Wa-lah… The Raekwon Patty!
So anyways, back to the story… Its like an Iron Chef challenge at my house, I’m running around like a chicken with my head cut off trying to get everything done and make it to the hotel in time. We get there, Rae is about to leave but of course he stays cause we brought the bomb food. I was all nervous wondering if I made the kind of patty he was talking about. So I serve Raekwon and Kay (his brother) up and the moment of truth arrived. Rae picked up the patty, took a nice big bite and chewed it up. Then he tells me, “You know Junebugg, I dont eat other people’s food but this right here (he waves the patty in the air) this is just like my Grandmother used to make, Rest In Peace!” OH MY GOD, HANDS DOWN THE BEST COMPLIMENT I EVER RECEIVED!
Another variation of the patty I make is the Project Pat-ty. It is vegetarian with sweet potato and other goodies inside

Rapper’s Delight was in full effect on Wednesday April 8th. Raekwon had a show at the Key Club and i had a show of my own in Long Beach. On this day i was working triple duty, chef, event coordinator and dj. Abigail and I started off early in the day cooking and in the afternoon, Rhettmatic and Eric Bobo came by to taste test everything for us before we delivered it to the Key Club. On the menu for the night:
Raekwon Patties – Jamaican curry with ground turkey
Macavelli & Cheese – Classic baked mac
Cee-Lo Greens – Delicious collard greens with all the flavor but no pork or meat
Boo-Ya Wings – Fresh fried spicy buffalo wings
De La Salmon – Ginger teriyaki salmon
Ol’ Dirty Custard – Banana Pudding with fresh bananas & Nilla Wafers

As the night progressed, we ran out of time for pictures. Abigail and I had chicken wings to fry and salmon to bake. Then we had to get fabulous, load up the cars with food for Raekwon’s show and Turntables for my show.
Abigail headed out to Key Club to deliver the food. She said it got swarmed and consumed lickety split. I headed over to the Cellar to set up equipment. Our show was featuring myself, El Boogie, Rhettmatic and Mystic with her dj Bonds. Luckily we were able to make extra food to feed the folks at our show too. It was a crazy night, but successful as always.
